My head is still spinning a bit after this weekend. On Friday an old pal from our Cambridge church turned up on our doorstep wanting a bed for a few nights – he’s on a walking tour of the country. My parents also came to stay and Rocky’s fiancee stopped over Saturday and Sunday nights. So we’ve had a houseful.

So far, so fairly normal – we’re glad that we can accommodate plenty of folk and love to show hospitality. But then the Vicar and I were both busy on Saturday – he on a Bishop’s Quiet Day and I on a Food Hygiene training course. And I was teaching Junior Church on Sunday and obviously it’s a pretty busy day for the Vicar aswell. So that made our schedules seem extra packed. We were very grateful to the grandparents who entertained the Queen, the Joker and the Engineer to soft play and a Chinese buffet whilst the Vicar and I attended our Saturday events.

But besides all the busy-ness, we’ve had some bother with buildings. Firstly, two of the Vicarage windows now have stone holes in them – a small pane in the living room and an enormous pane in the kitchen. Unsupervised primary school age children have been playing a stone-throwing game in the church yard so we think the damage is accidental rather than malicious. Doesn’t stop it being very annoying, though. The kids have now been banned from the church yard until we can work out something with the parents so that games don’t get out of hand and result in the sort of trouble that happened this week. The Vicar’s long-term desire to raise funding for a Families and Community worker gets an extra impetus every time something like this occurs.

And the banning of kids from the church yard now seems like a very wise move indeed after the discovery on Sunday morning of a plaster rose from the church clock face, shattered on the floor by the front door of the church. So the front doors had to be cordoned off and the congregation had to come into church through the North door. That made it extra embarrassing for the latecomers, who came in in full sight of everyone else. Various people have suggested calling the new Bishop of Ebbsfleet to sort things out with the masonry. Failing that we’ll be getting the builders in to ensure that things are safe and noone has the sky falling on their heads on their way into church.

One of the things I love about Vicarage life is its unpredictability. Most of the time this is great fun – I love my morning to be interrupted by someone wanting to chat at the kitchen table, especially when there is housework to be done. But I have to confess that I find it a bit of a challenge when our Sunday evening is disturbed.

Sundays are obviously a busy day for us – the Vicar almost always preaches at all three services in our church and is often leading at a couple of them. We often have church family members over for lunch aswell, and sometimes an afternoon group for baptism preparation or something like that. So when we get to 8pm(ish) and the evening service is finished, the church locked up and the Vicar and Rocky returned to the Vicarage and the children all put to bed (though sadly not necessarily asleep now they’re a bit older) we like to be able to chat a bit, pray a bit, watch some undemanding telly, eat cheese and biscuits and drink a glass of red wine.

But this week our usual routine was upset by a waif and stray with a bizarre story. Waif had come to the Vicarage at about 4pm wanting to speak to the Vicar. As our lunch guests were still here, the Vicar told him to come along to the evening service so they could chat then. And then after the service, Waif’s tale of woe came out. It involved ferries from Ireland, cash paid for tickets to the Man U-Barcelona Champions League final, B&Bs in random locations and strange train jouneys, culminating in Waif being in our parish on a Sunday evening with no money, no phone, no means of identification and needing a bed for the night.

His tale was so unbelievable, it might possibly have been true, but the main fact was that he needed somewhere to stay and was asking for our help.  I supplied the regulation cheese rolls and then we talked about accommodation. Although we have space here, accommodating complete strangers does not seem to be a wise undertaking. There is no homeless hostel in our town and not much of a chance of space being available in the Sally Army hostel in Birmingham. So in the end, the Vicar’s discretionary fund came into action. The Vicar drove him to a nearby pub with rooms, where he obtained B&B for Waif for a bargain £25.

And that was it. The Vicar returned to the Vicarage at 10pm and we ate late, went to bed late, and struggled to get started on Monday morning. All part of this strange and unpredictable life we have been called to, where the limits of our hospitality are regularly stretched. I think the Lord knew I needed a bit of a break after that though – on Monday morning we had two callers who sat drinking coffee with me so I could skive off the housework.

Despite my desire to become Alys Fowler (including the Pre-Raphaelite hair), things in the Vicarage garden didn’t go brilliantly last summer. I planted out, but didn’t really give things the attention they needed. I was too busy fire-fighting the clutter in the house.

But this year I’m hoping for more success. I now have a cleaner, who comes every couple of weeks to help me to conquer the house. I have a schedule, which means I am strangely (to me) doing a little more housework than I used to. So there may now be some time to water and weed.

And to start us off, last week we had the gardening team from Betel in to clear the beds and get us on the road to a manageable and (hopefully) edible garden this year. The team comprised four men – one was Gav Burnage, Associate minister from Aldridge Parish Church, who is living and working full time at Betel. The other guys were members of the Betel community in Birmingham, learning to live and work free from substance abuse.

God was kind to us, and the sun shone. The Vicar and Rocky joined the Betel team. I skived off the digging, but supplied regular tea and cake. They sorted out our main beds, nuked some brambles and the evil blue weeds and left everything looking tidy and ready for planting. Now we just have to keep up the weed-free look with regular forays in our wellies. The money we paid for the work helps to pay for Betel’s accommodation and keeps this amazing organisation going. I’ve just been enjoying some early Spring views from my kitchen window as the sun sets on a surprisingly balmy February day. First there was the cheering sight of the robin hopping about around the bird table that the Vicar was given for Christmas. He doesn’t seem to mind all the clutter out there in the yard.

The yard is also where the Vicar was then chopping logs in a manly way to prepare the wood for our fires for next winter. We’ve had a good haul of wood over the last few weeks, mainly due to some serious redevelopment going on in our town centre. They’ve been chopping a good few trees down and have left the wood out for the hunter-gatherer tribe, of which the Vicar is an enthusiastic member.

Watching the Vicar chop logs reminds me of Almost, who we’ve not seen for a few weeks now. Almost is from Kosovo and is once again trying to get leave to remain in the UK. Almost tells us that his 3 brothers got permission some years ago but he had to return to Kosovo with his wife and family. His wife was taken ill  (with a stroke) on the way back and died recently. So he is back here trying again. He is living in cramped conditions and occasionally comes to ask if we’ll pay him for some work or for help with his gas or electric.

When Almost was last here, the Vicar was log-chopping and was then clearing up the prepared wood before he was able to take Almost to the Post Office to top up his gas card. As he does with most visiting able-bodied men, the Vicar offered Almost a go of the axe. And although Almost is much slighter than the Vicar, his axe skills were far more impressive. We asked him if he’d chopped wood before, back in Kosovo.

Ah. Too many, too many.

I wonder if our boys will grow up with great axe skills but sighing about having to chop too many, too many.

Someone asked me recently for a low-fat traybake. Most of my cooking isn’t terribly healthy – I prefer to have a small slice of something delicious rather than a large wedge of something worthy. However, sometimes deliciousness and worthiness can combine, as is the case with these fantastic Date and Coconut Chews.

I was given this recipe by my friend Summer after we spent a very happy day off on a walk with her and her Vicar husband. We took a picnic lunch with us. I brought soup and Summer brought various treats including these. I’m not normally a fan of dates, but these slices are wonderful – chewy and sweet but full of fruit and coconut, which I think cancels out the butter and golden syrup.

Ingredients

  • 6oz/170g plain flour
  • 3 oz/85g dessicated coconut
  • 6oz/170g stoned dates, chopped
  • 6oz/170g caster sugar
  • 3oz/85g butter (you could use hard marg, but butter is tastier, isn’t it?)
  • 2 teaspoonfuls (1 dessertspoonful) golden syrup
  • 1 egg, beaten

Melt the butter, sugar and golden syrup (I always do this in the microwave, but you can do it on the stove aswell). Stir the dry ingredients together then add the hot butter mixture and the egg. Mix everything well and then spread out in a lined 9″x11″ (23cmx28cm) tin. Bake for 15-20 minutes at 180ºC (Gas 4, Fan 170ºC).

When cooled a little, cut into 24 slices. I did a little maths and reckon that each slice has about 3.5g of fat. This isn’t quite low enough to classify as ‘Low Fat’ in the US , but I think it’ll do.

[Late Edit: A Twitter pal tells me he’s tried this recipe using prunes instead of dates and rice flour in the place of plain and that it worked really well. Good for those on a gluten-free diet then.]

Yesterday I attended the (more or less) weekly diary meeting in the Vicarage. This is where we sort the week out, both churchwise and familywise. Monday mornings is our slot for this.

Making sure the message is received can be tricky

It’s not just me and the Vicar at these meetings: Rocky the Ministry Trainee attends too, as does Beauty, who volunteers some time to help the Vicar out with some of his admin. The weeks when this meeting doesn’t happen can get quite stressful as important information like ‘I’m doing a funeral but don’t worry I’ll definitely be back with the car in time for swimming’ doesn’t get communicated. The last couple of weeks have suffered from this lack of diary liaison.

So you will understand that I like it when we have a diary meeting. I’m not sure whether this is normal for clergy wives, but it certainly helps us.  Vicarage life suffers from a serious lack of routine, so knowing what is on this week helps me to keep my head above water. I also usually pop in to the less frequent meeting that the Vicar holds with his leadership team where they plan ahead for the coming months. This can be a great help for our plans as a family, especially as diary and admin aren’t really the Vicar’s strongest subjects.

Whilst we’re talking about Vicarage communications, I had a funny discussion on Facebook yesterday where a whole heap of Vicar’s wives (I think I decided ages ago that the collective noun is a hoot) agreed that the best way to communicate with our husbands is by email.  And this was a group of wives who don’t work outside the home, who could just pop their heads around the study door! I also use Facebook and Twitter from time to time. Little post-it notes get lost in the chaos of the study and verbal communications are immediately forgotten. Best to put it in (electronic) writing every time. How do you communicate as a family and avoid double or triple bookings or just the stress of not quite knowing what is going on and where the car has got to?

As I munched on yummy leftovers for lunch today, I thought it was time to blog my roast gammon recipe. Although it’s not all roasted – mostly it’s boiled, which ensures that it’s moist, whilst the roasting (with a glaze) sets in  a little crisp sweetness. Gammon is an excellent Sunday lunch joint – no waste and wonderful leftovers. And last week, in our local Tescos 2.7kg joints were going for £6! So we had one yesterday and another is in the freezer. The great advantage with gammon is that because it’s great with mashed potatoes, rather than roasted, you can have it mainly cooked before church and eat Sunday lunch at lunchtime rather than midafternoon, as tends to happen with anything involving roasties.

So this recipe is specially adapted for Vicarage dwellers, or anyone wanting to go to church on a Sunday and come back and eat within an hour or so of returning.

Cherry coke and jam ham

A great and speedy Sunday lunch - cherry coke and jam ham

Ingredients

  • Gammon joint
  • Cherry coke/coke/cranberry juice/apple juice/cider/spiced cranapple to fill pan over the meat (if there’s not quite enough top up with water) but for a 2.2kg joint I normally find 2l is enough
  • Cloves
  • Cherry jam/treacle/mustard and brown sugar

I usually rinse the joint in cold water – there’s never enough time to soak it or boil it up from cold, I find. Although lately I’ve not even bothered with this rinse. Then I simmer it for 30mins per 500g  in something tasty – cherry coke, ordinary coke, cranberry or apple juice, cider or (an excellent discovery tried this Christmas) leftover Spiced cranapple from the carol service. I usually pop an onion in alongside the joint too. Usually on a joint they tell you to cook it for 35mins per 500g plus another 35mins, but since I’m leaving the joint in warm juice during the service, I ignore their instructions.

Then when I get back from church I whack the oven up to 200C (Gas 6) and whilst it’s heating up I put the tatties on and fish the joint out and put it straight onto a roasting dish which I’ve lined with foil. Then I remove the funny plastic holder thing and carve off the top layer from the fatty skin part. I use the knife to make a diamond pattern and stud the criss-cross of each diamond with a clove. Then I cover the clovey fat with a sweet sticky topping. This might be (easiest and peasiest) black cherry jam boiled up a bit to make it stickier, or maybe some black treacle, or some brown sugar and mustard. My top tip for this is to have everything you need to hand before you start – teaspoons, cloves, mustard, sugar or whatever. It’s sticky and it’s better to get it over with quickly.

Then I pop the ham in the oven for only 15-30 minutes. Any longer and the sugary topping begins to burn and weld to the bottom of your roasting dish. So set the pinger to 15mins and check it. I consider it done when the sweet topping is caramelised but before the bottom of the pan is completely scorched.

This is why a foil lining to the dish is a good idea. I just wish I remembered that every time. Otherwise you can get the burns off by adding a sprinkle of dishwasher powder to water and boiling the mixture in your roaster on the hob. Takes off many a cooking stain. Also works on cast iron casserole dishes.

Whilst the ham is cooking, pop your veggies on, yell at the Vicar to come and carve and at the children to stop bickering, check that your guests are comfortable and very soon you’ll be enjoying a warming Sunday lunch. The leftovers of course are delicious. Very popular with Vicarage children in a pasta bake with cheese sauce, spaghetti carbonara, or the new favourite, Spanish gammon hotpot. Or picked at for lunch by the grown-ups.

Thought I’d share with you all what I consider to be an essential piece of Vicarage equipment: my sugar shaker. I know that it’s another year until you can add this to your Christmas list again, but at £3.05, I reckon you could sneak this in with a cup of coffee and an almond croissant at the Ikea cafe and not notice the strain on your purse.

This great piece of kit allows me to serve endless cups of tea and coffee for Vicarage callers without the added faff of pouring sugar into a bowl. And without people putting their wet stirring spoons back into the sugar and making coffee sugar clumps (yuck). Each shake delivers a teaspoonful of sugar – easy peasy.

Following up from watching lots of Handel’s Hallelujah chorus in the form of flash mob YouTube clips over the last couple of weeks, the Vicar nabbed a couple of Messiah clips to encourage folk in church this Sunday. Here is the one that’s not the Hallelujah Chorus – For Unto Us a Child is Born, set to kinetic typography, which helps you to meditate on the words as well as the marvellous music.

Happy Monday. Ours will be mainly spent phoning plumbers (frozen and burst pipes around the Vicarage) and sourcing extra warmth in the form of memory foam topper and electric blanket for Rocky the Vicar’s Apprentice, who has been so cold in the attic that his asthma has been playing up. He sees this as a part of his training for future ministry…

This week I’ve not got a baking recipe for you. Instead I thought I’d share a Vicarage supper recipe. For Sunday lunch this week I cooked a gammon joint (I really must blog that recipe sometime soon aswell). The Vicar had bought the gammon, and it was on offer. Being a Scotsman, therefore, he arrived with a joint that was larger than usual. We love gammon and very much enjoyed our lunch, but there were lots of leftovers.

Normally, I’ll use leftover gammon for sandwiches and a pasta bake with cheese sauce. But I didn’t feel like a pasta bake and there was far too much left for sandwiches. So I did what all social media junkies do: I tweeted my request for recipes for leftover gammon. And bingo! Spanish hotpot, rissoles and  many other great suggestions. One of the dishes I was reminded that I could make was a spaghetti carbonara. I often find recipes a bit of a pain when they are for four, as we almost never have an easy number eating. So I’ve organised this carbonara recipe per person:

Ingredients

Per adult, you will need (I used 5 times this recipe for 3 adults and 3 kids):

  • 1 egg yolk (look at it as an opportunity to make meringues)
  • 2tbspns double cream and 2 tbspns creme fraiche (or other proportion to make a total of 60ml if you’ve not got those in the right quantities)
  • 40g grated parmesan (or emmental, gruyere, mature cheddar)
  • 70g cubed gammon, bacon or pancetta
  • 1tbspn dry vermouth (or white wine, or leave it out altogether)
  • 10g/1tbspn butter
  • chopped parsley, black pepper to garnish

First put the spaghetti on to cook.

Then mix the cream and creme fraiche with the egg yolk and cheese. I mix it in a jug so it’s ready to pour out when the spaghetti is cooked.

Then fry the bacon/gammon until sizzling and crispy. Add the vermouth to the bacon and wait until the liquid has reduced and you have a good saucey consistency.

Then all you do is wait for the spaghetti to be cooked. Drain the cooked pasta and return it to the saucepan. Add the bacon with its sauce and the butter. Put it on a low heat and add the egg mixture. Gently stir until the sauce has warmed up. Serve with parsley and black pepper (or not, if your kids are fussy or you’ve run out).

Enjoy with a glass of wine. Or you might have to wait until after the trek down the M5 to piano lessons.
