When I had a surplus of leftover gammon the other week I made two very pleasing dinners for the family, as well as sending the kids to school with gammon sandwiches for half the week. The second recipe I tried was this Spanish hotpot, an extrapolation from a suggestion from a Twitter pal.
This was so popular that the kids were begging me for extras, even when it was all finished up. I shall be making this again, with chorizo or bacon if leftover gammon is lacking.
Ingredients
1 onion, chopped
1 green pepper, chopped
Chopped leftover gammon
1 tin tomatoes
1 tin baked beans
1tspn smoked paprika
Fry the onion in a casserole dish until soft and translucent. Then add the pepper and gammon, the tomatoes and the beans, together with the smoked paprika. Add water to cover the ingredients and simmer for about 20 minutes until the peppers are soft. Serve with rice or crusty bread.
It is the smoked paprika that makes this taste particularly delicious, although you could use the unsmoked variety if you haven’t got the smoked. Other options for this dish would be peppers of other varieties, different varieties of pork – bacon or chorizo perhaps, cannellini or haricot beans rather than baked (maybe add some tomato puree instead), and olives might be good too.
This sounds lovely and simple – useful for next time I have some leftover ham (or could be a good use some of those great value ham/bacon offcuts from the supermarket). Think I might exchange the baked beans (I’m not a huge fan) for chick peas …

Finally got round to making this tonight and we really enjoyed it. Used chick peas and included chorizo as well as some piment d’espelette pepper from our holiday in the French Basque country to give a little extra, but mild, heat. Yummy and quick – ideal for a speedy vicarage supper. Will be making this again for certain! (Expect a credit and a pingback when I eventually re-post.)

Made something very similar to this with chicken thigh pieces and a tiny amount of chopped chorizo the other night – it was also delicious. It’s a very versatile recipe.
I like the sound of this! We do something very similar with mince instead of gammon, addding 6 oz of pasta and cook for about an hour, or instead of the pasta, add scones to the casserole after an hour – for as long as the scones take to cook.
But using up leftover gammon with this set of ingredients – I’m looking forward to trying it.

Oh, need more liquid with the mince of course – don’t want anyone trying it and ending up with burnt on inedible stuff!

I keep seeing recipes using smoked paprika but have never seen it in a shop – do you have especially posh food shops in West Bromwich, or am i not looking hard enough?
Mine came from Tesco, so not posh at all. I understand one of the best ones is La Chinata (in a little red tin) which is stocked by Sainsburys. They have stopped stocking the sweet one, sadly, but the hot one is still available. When my Tesco one runs out I am off to Sainsburys to treat myself!
